Arroz de huitlacoche at Oyamel in Penn Quarter, Washington DC. Huitlacoche translates to the lovely-sounding “corn smut” (in addition, the name comes from the Nahuatl for “sleeping excrement”). This is probably why the Oyamel menu has it as “corn truffles.” It’s a fungus that forms on corn and is a delicacy in Mexico. I know it sounds kind of awful, but honestly, it is really delicious, and kind of truffley. This dish is rice with corn smut.
